HHFC Recipe: AIP Helper!
With it being so cold outside, I've been craving some serious comfort food! I came up with this delight while experimenting the other night and it was a HIT!
1 lbs of grass fed ground red meat (I used Bison from my fav farm)
1/2 organic sweet onion-diced
1 organic carrot-diced
1 organic celery stalk-diced
1 cup Nomato sauce
4.5 oz Farm Cheddar “Cheese”
Sea salt, garlic powder, parsley to taste *I like to use fresh
2 cloves garlic
12 oz cubed white sweet potato
Organic green veggie of choice for base (I used Broccolini)
Boil cubed sweet potato for about 8 min, set aside
Saute onion, carrot, celery approx 5 min
Brown meat & add spices + garlic, approx 5 min
Add in Nomato sauce and crumble in “cheese”
Combine until melted-gently stir in sweet potato
Serve atop your veggies!
You've been hearing "grass-fed" so much lately that you think its a fad right? Well, the differences between grass fed and your typical conventionally raised grain-fed livestock are HUGE!
For starters, you are what you eat-eats! Meaning, that whatever the animal that you are consuming eats...is also something you are eating. Grains are NOT what the animals are naturally raised on which creates much more acidic intestinal tracts. That in turn promotes the growth of bacteria like E. coli, which can actually kill someone who eats undercooked beef like a rare hamburger.
Along with dysbiosis of the animals internal eco system, feeding them grains makes lower in all of the good nutrients and higher in the bad ones! Grain-fed livestock are higher in Omega 6 vs Omega 3 fats. That's something pretty important being that our omega 3 to 6 ratio's have been out of whack for quite some time. Having a diet higher in Omega 6s vs 3, leads to premature aging, cardiovascular disease, intestinal permeability etc. Grass-fed meat contains more antioxidants, omega-3’s, CLA* (conjugated linolenic acids), trace minerals, and vitamins than any other food, including conventional meat.
*CLA has SO many proven benefits from cancer fighting to weight loss.
A big one for me: About 80 percent of antibiotics sold in the United States go to livestock like cows. Cows not grass-fed, live on diets of grain and are typically given hormones to unnaturally increase their weight and yield more meat. With grass-fed cows, weight gain is not as high because they eat a healthier, lower-calorie diet. The main reason farmers use more antibiotics is that as meat demand goes up, animals are confined to smaller and smaller spaces, and this greatly increases the spread of disease. The use of antibiotics in meat, particularly factory-farmed meats, contributes to antibiotic resistance in humans, which is why it’s so important that you not only question what goes in your body, but what goes in the body of the animals you put on your plate!
Lastly, there's some great news when it comes to grass-fed beef. Research now shows that grass-based beef production and finishing actually benefit the environment by decreasing greenhouse gas emissions, increasing biodiversity of pasture ecosystems and improving quality of run-off water from well-managed pastures. Overall, grass-fed beef has actually been shown to reduce the carbon footprint and help the environment rather than hurt it.
When you eat grass-fed beef, not only are you doing something good for yourself, but you’re also eating with a conscious and promoting the proper treatment of cows!
